Start off with a clean coffee maker. Use the ratio of 2 tablespoons of Kona coffee for every 6 ounces of water. If your tap water is less than ideal, try using filtered or bottled water instead. According to studies, the optimal water temperature for drip coffee is 203 - 208F (95-98C). Colder water doesn't extract enough caffeine/essential oils from the beans, and above this temperature the acidity increases too much. Once you’ve brewed your Kona coffee, it will only keep for 15 to 20 minutes before beginning to lose its flavor. To keep Kona coffee hot for a longer time, pour it into a vacuum server or thermos. And never, ever reheat or boil Kona coffee. Store Kona coffee in an airtight container in a cool, dry place and grind only as much as you need that day.
